Raisin' the Roof! - Pancakes with apples and raisins
I always find it charming to cook while on vacation or simply just having a spare time for myself before anything else that I must/have to do. Doing so, there are so many quirks and questions, the most important of which is – what do I have in the kitchen or fridge. Hmmmm…. Just so you know, I love raisins. Hence, I always see to it that I always have some in-stock. I put them on my cereals, oatmeals, pancakes, or simply munching them while watching movies or sometimes, having them when am so hungry yet I still have to prepare dinner after long day at work.
Raisins are proven to have healthy benefits including relief from constipation, acidosis, anemia, fever and etc. Raisins are irreplaceable as a healthy member of the dry fruits catergory. These golden, green or black delicacies are favorites of almost everyone, particularly children. One of my nieces loves these.
Pancakes are one of the most easiest breakfast to make. This past weekend off, I couldn’t help it but made pancakes for myself and family as I miss those. Pancakes can go with almost any fruits so I decided to make pancakes with apples and raisins since those are the things I had in-stock, apparently. I didn’t have any maple syrup so I also made a syrup myself. These are so easy to make!
The following are the only things you need:
- I used 1 pack of Maya pancake mix mixed it together with eggs and fresh milk. The number of eggs and amount of fresh milk are actually depend on your preference. For a 1 pack of Maya pancake mix (250grams) I usually use 2 medium sized eggs, pour in 2 table spoon of extra virgin oil ( you can use butter if you like), I use about a ¾ cup of fresh milk instead of water as I prefer my pancake to be fluffy and creamy. Just mixed them all in together and stir it very well until it turns into a smooth, creamy and runny batter.
- This time I used apples and raisins as I ‘ve said. Those are the things I had in-stock. Sliced the apples in a medium strips and place them on top of your pancakes. Sprinkle some raisins on top of it. You may pour some maple syrup. Also, I think, it would be great to put some whip on a very top of it.
- For 1 pack of Maya pancake mix it can yield from 9-10 pancakes. Plating would depend how artistic you are, really.
